Here’s another of my favorite things to do with those overripe bananas that can practically always be found sitting on my counter. Cuz yeah, as you may recall, despite my not really caring for bananas, I can’t resist buying a bunch practically every time I hit the grocery store, just so I can let them ripen and turn them into Banana Bread, or well, this delicious oatmeal! 

I’m a huge fan of eating cereal in the morning, and oatmeal totally qualifies as my favorite! And since I also happen to like banana bread so much, well this one is like a match made in heaven. I like to make a big batch on a day off and enjoy some of it fresh out of the pot, and then eat the leftovers throughout the week, either reheated or just plain cold, as an addition to my boxed cereal. Not only do the cold oats add a very agreeable soft and chewy texture to my morning bowl of goodness, but they also add tons of flavor and nutritious wholesomeness.

Apple Cinnamon Multigrain Oatmeal

This tasty, dreamy, heavenly bowl of soul warming wholesome goodness has been my and my life partner’s favorite breakfast of late… We just can’t seem to get enough of it! I’ll usually make a big batch on Monday morning and then we try and have it last us all the way through to the end of the week, by alternating between this and our other regular breakfast options.

But to be honest, when we have some of that delicious multigrain oatmeal in the fridge, all ready to be reheated in just minutes, we have a bit of a hard time settling for anything else. So it usually ends up lasting us only 3 to 4 days.

What I’m trying to get at is, you might be looking at the recipe thinking “Oh my, there’s enough to feed an army here, I think I’ll halve the recipe” but really, maybe you should think again. The recipe as written makes about 6 servings, 8 if you have a small appetite or if kids are included at the family table. Seeing as how this oatmeal takes about an hour to make, but reheats in just a few minutes, I think that even if you’re only feeding a few people, it’s totally worth your while to make a full batch and save the leftovers for another day. Plus, it will keep in the fridge for about a week, so really: Go all out and make the big batch!

Cuz you know, on top of reheating super quickly, it’s also phenomenal in its cold state. I like to sometimes eat it as is, right out of the ice box, as a little afternoon snack. Another thing I really like to do is add some of it, cold, to my bowl of flaked cereal and granola. It adds a great soft and slightly chewy texture to it.

Dark Chocolate Coconut Squares

So I was watching hockey with my boyfriend the other night and we got a sudden craving for a little something sweet… He went to the kitchen and returned with a bag of dates and a bar of 85% dark chocolate

We started eating the two of them together and I immediately fell in love! 

I just knew right then and there that I’d have to make something out of this heavenly union. At first, I was shooting for simple dark chocolate coated dates, but then my vision evolved and eventually transformed into the crazy decadent but surprisingly healthy Dark Chocolate Coconut Squares that you see before you. 

You’re looking at a super thick layer of creamy, rich, smooth and silky dark chocolate filling that feels just like the most decadent of truffles, trapped between two layers of crunchy, slightly sweet and crumbly oats and coconut crust.
