Oh, and also vegan, gluten-free, made with a bunch of wholesome ingredients, super quick and easy to make. But really, who cares? Peanut butter and chocolaaaaate! Oh yeah, I know!

Oh, and also vegan, gluten-free, made with a bunch of wholesome ingredients, super quick and easy to make. But really, who cares? Peanut butter and chocolaaaaate! Oh yeah, I know!

Peanut butter and chocolate… simply put, they’re a match made in heaven! Some dreamy food combination thought up by the gods themselves. Right? Right! 

If you agree with the above statement, then you need to stop what you are doing right now and immediately run to your kitchen to whip up a batch of these babies. You won’t believe how much flavor they pack under their hood! Think Reese’s Peanut Butter Cups, to the tenth power, in a much less sweet version. We’re talking intense dark chocolate jab followed by a crazy peanut butter uppercut. These bars, they will send you straight to the floor, I tell you.

The best part is they are super super quick and easy to make! Ready in under fifteen minutes (well, the bad news is you then have to give them time to set… but just keep yourself occupied and that hour will totally fly by) and won’t even dirty up the kitchen. All you need to make them are a few basic kitchen implements and a handful of simple ingredients.

Seriously… so easy, even a child could make them!

I’ve always had a bit of a sweet tooth… or maybe, a lot of a sweet tooth. Especially in the evening, for some reason. Usually not long after supper, I’ll get a some kind of craving for a little bit of sweetness… Not for a big flat out, sit-yourself-down-with-fork-and-plate dessert, like a big slice of cake or any other such decadence… More like, just a little nibble of something sweet. I’ll usually reach for a few pitted dates and a square or two of dark chocolate, but sometimes, my tummy demands that I provide something a little bit more, erm, elaborate.

That’s when I’ll whip up a batch of chocolate chip cookies, or make quick and easy bite-size treats such as these trail mix chocolate clusters. Just one of those usually does the trick and keeps my tummy all smiley and happy. Little does he know that I’m actually feeding him all kinds of good things like nuts and dried fruits, hemp hearts and coconut and whole grain cereal… Nah! The only thing he cares about is the chocolate, I think. Oh, and the fact that these taste absolutely insanely delicious. 

A little too much even; cuz trust me, those chocolate clusters are so crazy yummy, it’s really hard to stop at just one… you’ll see!

Vegan Peanut Butter Chocolate Chip Cookies

So I had a major craving for a good chocolate chip cookie… Being fairly new at this whole vegan baking thing, I had to scour the Internet in search of ideas and inspiration, so I could whip me up a batch.  

One thing I quickly came to realize is that “vegan” isn’t necessarily synonymous with “healthy”… There are TONS of really yummy looking vegan dessert recipes out there, but as soon as you start to read the ingredient list, they quickly loose their appeal! Indeed, a lot of them call for standard ingredients, such as vegan butter or margarine, granulated sugar, brown sugar, corn syrup, etc.  

Hmpft. While I understand that there is no real way to create a truly healthy chocolate chip cookie, I still wanted to indulge in a somewhat healthier treat. So I went ahead and crafted my own recipe. And while I’m still new at this, I think I managed to whip up a pretty decent batch of vegan cookies, seriously! 

Those cookies are loaded with flavor, super soft, tender, slightly chewy, and all kinds of yummy! And while they do contain peanut butter, the peanut taste is very subtle and not at all overwhelming… it just contributes in making the cookies taste super rich and buttery

One thing’s for sure: they totally, positively took care of my craving!

Dark Chocolate Coconut Squares

So I was watching hockey with my boyfriend the other night and we got a sudden craving for a little something sweet… He went to the kitchen and returned with a bag of dates and a bar of 85% dark chocolate

We started eating the two of them together and I immediately fell in love! 

I just knew right then and there that I’d have to make something out of this heavenly union. At first, I was shooting for simple dark chocolate coated dates, but then my vision evolved and eventually transformed into the crazy decadent but surprisingly healthy Dark Chocolate Coconut Squares that you see before you. 

You’re looking at a super thick layer of creamy, rich, smooth and silky dark chocolate filling that feels just like the most decadent of truffles, trapped between two layers of crunchy, slightly sweet and crumbly oats and coconut crust.
